Lamb Madras

Madras is a fairly hot curry, with a special blend of Qurry spices. Great with a nice cold beverage.

 

Stuff you will need

  1. 4 tbsp oil
  2. 1 large onion(or 2 medium), diced
  3. 2 to 4 green chillies, finely chopped
  4. 800g lamb, diced (we prefer shoulder)
  5. 4 garlic cloves, minced or 2 tsp garlic paste
  6. 2 tsp ginger paste or 1 1/2 inch fresh ginger, grated
  7. 4 medium fresh tomatoes, diced
  8. 400ml coconut milk
  9. A handful of fresh coriander (optional)

Method

  1. Put the oil in a pan over medium heat. When hot add the onions and cook for 10 mins until golden and soft.
  2. Add garlic, ginger, chillies and cook for 1 min.
  3. Add Lamb cook for 10 mins until sealed.
  4. Add QURRY SPICES, tomatoes, and coconut milk, stir and bring to boil. 
  5. When boiling cover and cook on low heat for 1 hour.
  6. Remove lid and turn the heat to high, cook until the sauce has thickened, this may take 20 to 30 mins.
  7.  Add a handful of fresh coriander and serve
