Lamb Madras

Madras is a fairly hot curry, with a special blend of Qurry spices. Great with a nice cold beverage.
Stuff you will need
- 4 tbsp oil
- 1 large onion(or 2 medium), diced
- 2 to 4 green chillies, finely chopped
- 800g lamb, diced (we prefer shoulder)
- 4 garlic cloves, minced or 2 tsp garlic paste
- 2 tsp ginger paste or 1 1/2 inch fresh ginger, grated
- 4 medium fresh tomatoes, diced
- 400ml coconut milk
- A handful of fresh coriander (optional)
Method
- Put the oil in a pan over medium heat. When hot add the onions and cook for 10 mins until golden and soft.
- Add garlic, ginger, chillies and cook for 1 min.
- Add Lamb cook for 10 mins until sealed.
- Add QURRY SPICES, tomatoes, and coconut milk, stir and bring to boil.
- When boiling cover and cook on low heat for 1 hour.
- Remove lid and turn the heat to high, cook until the sauce has thickened, this may take 20 to 30 mins.
- Add a handful of fresh coriander and serve
