Lamb Dhansak

This dish is a popular Indian curry made from lamb, lentils and flavoured with Qurrys own warming spices.

Stuff you will need

  1. 4 tbsp oil
  2. 800g lamb, cut into small bite size pieces
  3. 2 large onions, roughly chopped
  4. 4-5 garlic cloves, minced
  5. 1 tsp ginger paste or 1 inch fresh ginger, grated
  6.  1 x 400g tin tomatoes 
  7. 160g split red lentils
  8. 1 chilli, sliced
  9. 400ml chicken stock
  10. 1 tbsp honey
  11. Handful fresh coriander

Method

  1. Add 2 tbsp oil into a pan on high heat. When the oil is hot fry the lamb in batches until browned. When all the lamb is brown set aside on a plate and discard the oil from the pan.
  2. Add the remaining 2 tbsp oil to the same pan on a medium heat. Add the onions and fry for 10 mins until soft and golden.
  3. Add garlic, ginger and QURRY SPICES, cook for 1 min.
  4. Put the lamb back in the pan along with the lentils and stir.
  5. Add tomatoes, chilli then stir. Add the stock, stir and cover. Turn the heat to high and cook for 15 mins.
  6. After 15 mins gently stir the curry, turn down the heat, cover and cook for a further 30 mins.
  7. At this point taste the curry, if needed add salt and pepper then add the honey. Cook for a further 2 mins, add coriander, stir and serve.
