Lamb and Spinach Curry

This dish is packed full of flavour thanks to the lovely combination of lamb, spinach and spices.

Stuff you will need

  1. 4 tbsp oil
  2. 700g lamb, diced
  3. 2 onions, roughly chopped
  4. 2 tsp garlic, crushed
  5. 2 tsp ginger paste or fresh ginger, grated
  6. 200g tin tomatoes
  7. 150g fresh spinach
  8. 2 green chillies
  9. 100ml water

Method

  1. Add oil to a pan on medium heat, add garlic, ginger and cook for 1 min.
  2. Add tomatoes, stir and cook for 2 mins.
  3. Add QURRY SPICES, cook for 1 min.
  4. Add lamb, stir, then add onions. Turn up the heat and bring to boil. Once boiling turn down the heat to simmer, cover and cook for 1 hour.
  5. Uncover the pan and add spinach, stir then add the chillies. Put the lid back on the pan and cook for a further 20 mins.
  6. Uncover the pan, add 100ml water, turn the heat to high and cook until the water has evaporated. This should take between 15 - 30 mins. Serve
