Lamb and Spinach Curry

This dish is packed full of flavour thanks to the lovely combination of lamb, spinach and spices.
Stuff you will need
- 4 tbsp oil
- 700g lamb, diced
- 2 onions, roughly chopped
- 2 tsp garlic, crushed
- 2 tsp ginger paste or fresh ginger, grated
- 200g tin tomatoes
- 150g fresh spinach
- 2 green chillies
- 100ml water
Method
- Add oil to a pan on medium heat, add garlic, ginger and cook for 1 min.
- Add tomatoes, stir and cook for 2 mins.
- Add QURRY SPICES, cook for 1 min.
- Add lamb, stir, then add onions. Turn up the heat and bring to boil. Once boiling turn down the heat to simmer, cover and cook for 1 hour.
- Uncover the pan and add spinach, stir then add the chillies. Put the lid back on the pan and cook for a further 20 mins.
- Uncover the pan, add 100ml water, turn the heat to high and cook until the water has evaporated. This should take between 15 - 30 mins. Serve
