This dish is a popular Indian curry made from lamb, lentils and flavoured with Qurrys own warming spices.
Stuff you will need
- 4 tbsp oil
- 800g lamb, cut into small bite size pieces
- 2 large onions, roughly chopped
- 4-5 garlic cloves, minced
- 1 tsp ginger paste or 1 inch fresh ginger, grated
- 1 x 400g tin tomatoes
- 160g split red lentils
- 1 chilli, sliced
- 400ml chicken stock
- 1 tbsp honey
- Handful fresh coriander
Method
- Add 2 tbsp oil into a pan on high heat. When the oil is hot fry the lamb in batches until browned. When all the lamb is brown set aside on a plate and discard the oil from the pan.
- Add the remaining 2 tbsp oil to the same pan on a medium heat. Add the onions and fry for 10 mins until soft and golden.
- Add garlic, ginger and QURRY SPICES, cook for 1 min.
- Put the lamb back in the pan along with the lentils and stir.
- Add tomatoes, chilli then stir. Add the stock, stir and cover. Turn the heat to high and cook for 15 mins.
- After 15 mins gently stir the curry, turn down the heat, cover and cook for a further 30 mins.
- At this point taste the curry, if needed add salt and pepper then add the honey. Cook for a further 2 mins, add coriander, stir and serve.
