Chicken Qurry

Chicken pieces cooked in a sauce made with onions, ginger, garlic and tomatoes, flavoured with Qurrys own spice blend.
Stuff you will need
- 3 tbsp oil
- 3 onions, finely chopped
- 4 garlic cloves, crushed
- 1 tsp ginger paste or 1-inch ginger grated
- 400g tinned tomatoes
- 1 tbsp tomato puree
- 600g chicken, diced
- 250ml water
- A handful of fresh coriander
Method
- Add 3 tbsp oil to a pan on medium heat. When hot add onions and fry for 15 mins until onions are golden.
- Add 200g of the tomatoes (half tin), stir well and cook for 5 mins.
- Add garlic, ginger and Qurry spices, stir and cook for 1 min.
- Add tomato puree, stir and cook for 1 min. Add the remaining 200g tomatoes stir and cook for 10 mins.
- Add the chicken, stir and cook until the chicken is sealed. Add 200ml of water, bring to boil, turn down the heat, cover and cook for 30 mins stirring now and again.
- Uncover and cook for 10 mins until the sauce had reduced.
- Add fresh coriander and cook for 2 mins, serve.
