A fantastic chicken balti curry, tender chicken pieces in a fragrant sauce. One of our more popular curries. It is spicy, aromatic and comforting.
Stuff you will need
- 600g chicken diced
- 2 tbsp oil
- 2 onions, chopped
- 2 tsp garlic paste or 3 garlic cloves, crushed
- 2 tsp ginger paste or 1inch fresh ginger, grated
- 3 tsp tomato puree
- 200g tin tomatoes (half a tin)
- 300ml chicken stock
- 1green chilli (optional)
- 1 Handful of coriander (optional)
Method
- Add oil to the hot pan, add onions and fry for 10 – 15 mins until golden.
- Add garlic, ginger and QURRY SPICES and fry for 2 mins.
- Add chicken or lamb and cook on medium heat until sealed.
- Add tomato puree and stir. Add in the tin of tomatoes and stir again then add the stock. Bring to boil.
- Once boiling turn heat down, cover and simmer for 30 – 40 mins until the meat is cooked and tender.
- uncover the pan, If you want your balti spicy add a chopped chilli (I use birdseye chillies) and cook for a further 15 mins or until the sauce has thickened.
- Stir in the coriander (optional), serve.
